Hubby is a meat and potatoes guy. But we also like to eat healthy. After much debate we had our chicken, brown rice, broccoli, and carrot(he is the only one that eats those) meal tonight. He said it doesn't fill him up. I love it because it is healthy and is great to put the leftovers in a bowl and take to work for lunch. Do you guys have any recipes that would fill him up, are healthy, and make great reheated leftover lunches?
I don't cook so I'm of no help.

ReplyDeleteINGREDIENTS
2 (1-inch-thick) beef tenderloin steaks (about 3/4 lb.)
2 tablespoons purchased pesto
1 teaspoon oil
1/4 teaspoon salt
1/8 to 1/4 teaspoon pepper
DIRECTIONS
1. Heat grill. With narrow sharp knife, make a 1-inch slit in one side of each steak. Make a pocket in each steak by moving knife around inside of steak. DO NOT ENLARGE THE 1-INCH OPENING.
2. Spoon half of pesto into each steak, spreading it around the inside of the steak. Brush all sides of steaks with oil; sprinkle with salt and pepper.
3. When ready to grill, place steaks on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 7 to 11 minutes or until of desired doneness, turning once.
Broccoli Salad
ReplyDeleteChop finely Broch, radishes, yellow pepper, carrots, cauliflower, and any other veggies you want to sneak in. Mix together, and use Hidden Valley Buttermilk Ranch dressing mix. I only chop enough veggies for us 3 to eat. It's refreshing summer addition and all fresh!
We've been doing a lot of kabobs this summer on the grill. I do chicken and steak, as well as different colors of peppers, and pineapple. We eat it with brown rice and a summery salad...delish! And it fills up my hubs, who is a big eater!

ReplyDeleteI'm no Martha Stewart, so these "go-to" dinners aren't fancy or impressive, but - they're fast, tasty, and are low in fat & calories:
ReplyDelete1. Chicken breasts with instant mashed potatoes. We make gravy from the powder mixes. It's like 25 calories for all the gravy. Sometimes we will have baked sweet potato fries instead.
2. White fish with rice. Sometimes we'll make gravy to put over the rice, other times we use hot sauce or soy sauce.
3. Hamburger Helpers (You are getting impressed now aren't you?) hehe
4. Thin crust frozen pizza. It's about 400-450 calories for half a pizza.
I could eat meat and potatoes for every meal!!
