In my opinion we eat really good over here at casa de Megs7827. But Hubby and I are also picky/boring eaters. We also have topic secret recipes. Hubby uses my Nana's recipe to make the best cookies on the planet! People regularly beg us for the recipe. I posted on facebook last night "who likes Hubby's cookies?" And these are the responses I got: "U KNOW WE DOO", "They are the best cookies in the world!", and "I do! I do!! I do!!! I do!!!! I do!!!!! I do!!!!!! I do!!!!!!! Can The Big Guy take a hint?". Our neighbor asked if he put concentrated orgasms in them.
It was so hard to pick our two favorite recipes. I was yelling from the other room, "If you had to eat two recipes the rest of your life what would they be." But he couldn't pick. We love to marinate chicken or steak and bbq it. Costco has the best chicken, flank steak, and tri tip. We use the Yoshida's marinade they sell there. Hubby loves their shrimp prawns for bbq or pasta. We are going to start eating more salmon from Costco as well. He broilers it in lemon and spices or bbqs it in aluminum foil. We love our taco Thursday. He make the white corn tortillas by putting them in a pan of evoo to get them kinda crispy. We cook the chicken in Lawry's chicken taco seasoning. We use Knorr's Spanish rice. He puts beans. Costco mexican cheese, sour cream. Sometimes I do lettuce and red onions or green onions. Yumm! He also makes calzones from pillsbury's pizza dough. Some marinara, cheese, pepperoni, folds it over and cooks each side for 10 mins then 5 mins. Those are just some ideas you can play around with. I like the first recipe because it has all your food groups, is cooked in one pan, is quick, and healthy!
Chicken and Rice with Vegetables
You will need:
1 tbsp. oil
1 lb. boneless skinless chicken breasts, cut into strips
3 cups cut up vegetables (we do broccoli and carrots)
14 1/2 ox can chicken broth
1 cup minute brown rice
1 cup minute white rice
Italian dressing (this is a kraft recipe so that what they recommend, we use Olive Garden's)
Heat the oil in a large skillet on medium heat. Add chicken. Add vegetables after chicken looks pretty close to cooked. Cook and stir for 3 to 5 mins. Stir in broth. Bring to a boil. Add brown rice and dressing. Cover and cook 5 mins. Add white rice and water if needed. Cover and cook 5 mins. Check to make sure rice is cooked. Serve!
Hubby and I love PF Changs lettuce cups. So I was excited when I found this recipe because it sounded yummy and easy. Which it is!
Caesar Lettuce Cups
You will need:
1lb chicken
salt and pepper
2 cloves garlic minced
1tsp Worcestershire sauce
1/2 cup Parmesan cheese
iceberg lettuce
Cook chicken in frying pan. Season with salt and pepper. Add garlic, then Worcestershire sauce and cheese. Separate cups of lettuce. Scoop mixture into leaf. Optional add croutons or red onion. Serve!

ReplyDeleteMy new favorite thing is BBQ chicken pizza with BBQ sauce, tomatoes, chicken, red onions, and fresh minced garlic. Yum-O. Slap your mama twice and eat it straight off the pan.
